I have a hard time seeing small font, so I wonder if there's a way to make the font bigger, or increase the GUI size a bit so it's easier on my eyes...

Dont expect more or less than what you ask for.
Currently that isn't an option, the gui size will depend on your monitor/game resolution, but its something that is being planned.
